VEGAN  One Pot Pasta

This delicious pasta dinner is a healthy meal and a real time saver! The veggies, gluten free pasta, and creamy vegan tomato cream sauce simmer in one pot, and turn into healthy dinner magic.

For this vegan pasta you need chickpea pasta, veggies, spices, fresh herbs, cashews, and canned diced tomatoes.

WHAT YOU NEED

Add soaked cashews and diced tomatoes to a blender with all the seasonings for the sauce. Blend until smooth.

ONE

In a saucepan, add olive oil, onions and garlic. Saute on medium high heat until they have begun to brown.

TWO

Add sliced peppers and green beans, and saute until done to your liking. Remove all veggies from the pan and set aside.

THREE

Simmer 2 cups of water and creamy tomato sauce with chickpea pasta for 5-7 minutes until sauce begins to thicken.

FOUR

Add veggies and sun dried tomatoes. Toss to coat. Garnish with fresh thyme, parsley, or basil.

FIVE

This pasta is just as delicious the next day. The leftovers keep very well.
