Quinoa Cake

This Chocolate Quinoa Cake is easy to make, light and fluffy, and very similar in taste to a traditional cake.

WHAT YOU NEED:

Quinoa  Dates Coconut oil Eggs Vanilla Cocoa powder Arrowroot powder Sea salt Baking soda

Drain dates well, and then add to a food processor with cooked quinoa.

ONE

Add coconut oil, eggs, and vanilla, and process for another 1-2 minutes, until the dates are broken up, but there is still some texture to the quinoa.

TWO

Add cocoa powder, arrowroot, sea salt and baking soda, and then pulse to combine

THREE

Pour batter into prepared baking dish, and use a spoon to smooth over the top. Bake for 28-32 minutes.

FOUR

It is sugar free, sweetened only with fruit. We love it with my (sweet potato) Healthy Chocolate Frosting.
