Mexican Quinoa

This One Pan Mexican Quinoa will become a new staple in your household! 

Quinoa Vegetable broth Crushed tomatoes Black beans Corn Chili powder Cumin Sea salt Mexican oregano

WHAT YOU NEED

Olive oil Bell pepper Onion Salt and pepper Cheddar cheese Avocado Cherry tomatoes Cilantro Green onions 

WHAT YOU NEED

Add sliced onions and peppers and sauté for 5-7 minutes

ONE

To the same pan, add the quinoa, crushed tomatoes, vegetable broth, salt, spices, beans, and corn. Stir to combine

TWO

Once the pot is boiling, reduce heat to low, and cover. Simmer for another 30-40 minutes

THREE

Once your rice is cooked, stir the tomato sauce back into the quinoa

FOUR

Top with shredded cheese, if desired.

FIVE

Top the dish with sautéed peppers and onions, avocado, tomatoes, cilantro and green onion, or any other toppings you desire!

SIX

Top with veggies, avocado, or herbs, based on what you have on hand. A great vegetarian quinoa recipe for busy nights!
