Sweet Potato Waffles

A healthy sweet potato waffle recipe that uses raw grated sweet potato. A light batter is made with coconut flour and egg, and then these waffles cook in about 10 minutes. The perfect option for building a healthy breakfast sandwich!

Instructions

  • Cook eggs to preference.
  • Add breakfast sausage to skillet, and cook over medium heat until golden brown.
  • Slice the vegetables, and layer the on top of 1 sweet potato waffle. Top with the sausage and egg.
  • Add the 2nd sweet potato waffle on top to form a sandwich.

Notes

*I did not peel the sweet potatoes prior to peeling. I just check the skins to make sure they are clean, and cut off any questionable areas that might be starting to mold. You won't see or taste the peels once they are shredded and cooked!
