Keto Broccoli and Ham Casserole

So much goodness in this easy casserole! It takes about 10 minutes to mix the ingredients together in a casserole pan, and then bakes with a cheesy layer on top. It's the perfect low carb meal that the whole family will get behind.

Ingredients

  • 3 eggs whisked
  • 1/3 cup heavy whipping cream *look for pastured or grass-fed
  • 1/2 cup parmesan cheese grated
  • 1 teaspoon sea salt
  • black pepper to taste
  • 6 cups cauliflower rice
  • 2 packages Jones Dairy Farm Hickory Smoked Canadian Bacon
  • 4 cups broccoli florets
  • 2 cups cheddar cheese

Instructions

  • Preheat oven to 425º F.
  • In a medium sized mixing bowl, whisk together the eggs, heavy whipping cream, parmesan cheese, salt and pepper.
  • Into a 9×9 inch casserole pan, add the cauliflower rice, ham, broccoli, and the egg mixture. Use a fork to mix together the the ingredients.
  • Top the casserole with the shredded cheddar cheese.
  • Cover the casserole with foil, and bake for 35 minutes. Uncover the casserole, and bake for another 10 minutes to brown the cheese on top.

Notes

Frozen or fresh cauliflower rice works in this recipe. If using frozen, allow it to mostly thaw prior to adding it to the casserole dish. Use this guide to make homemade cauliflower rice.
Tip: If the cauliflower rice lets out a lot of water, drain the excess water after removing the foil, before cooking the casserole for the last 10 minutes uncovered.
