Meal Prep Stuffed Sweet Potatoes

An easy and delicious meal prep idea! Bake sweet potatoes, and prepare fillings to stuff them with. These 4 filling suggestions are all no-cook- just chop a few veggies and mix together! Choose from a Greek Salad, a Black Bean Burrito, a Tart Cherry Tuna Salad, or a sweet Breakfast Berry and Almond Butter option!

Ingredients

  • 4 baked sweet potatoes

Greek Salad Filling

  • 2 cups arugula or spinach
  • 1 cucumber sliced
  • 1 cup cherry tomatoes halved
  • 1/2 cup black olives
  • 1/2 red onion chopped
  • 2 tablespoons olive oil
  • 2 tablespoon lemon juice
  • 2 tablespoons red wine vinegar
  • 1/2 teaspoon Italian seasoning
  • feta cheese optional, to garnish

Black Bean Burrito

  • 1 can black beans drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 jalapeno chopped finely, added to taste
  • 2 tablespoons cilantro chopped
  • 1 tablespoon lime juice
  • 1/2 teaspoon cumin
  • 1/4 teaspoon sea salt or to taste, depending on whether beans are salted
  • cheddar cheese shredded, optional
  • avocado sliced, optional

Tart Cherry Tuna Salad

  • 1 can tuna in water, drained
  • 1/2 cup celery chopped
  • 1/4 cup pickles diced
  • 1/4 cup dried tart cherries
  • 2 tablespoons dill fresh, chopped (optional)
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon olive oil

Berry Almond Butter

  • 1 cup strawberries
  • 1 cup blueberries
  • 4 tablespoons almond butter or other nut butter
  • cinnamon to taste, optional

Instructions

Greek Salad

  • Add chopped veggies along with salad dressing ingredients into a bowl, and mix to combine. When ready to serve, stuff sweet potatoes, and add feta, if desired.

Tart Cherry Tuna Salad

  • Add tuna, chopped celery and pickles, dill and cherries to a bowl, and then add tahini, lemon juice and olive oil. Mix well to combine. When ready to serve, stuff sweet potatoes with the mixture.

Black Bean Burrito

  • Add black beans, tomatoes, cilantro, and jalapenos to a bowl. Season with lime juice, salt to taste, and cumin. When ready to serve, stuff sweet potatoes with black bean mixture, and top with cheese and avocado.

Breakfast Berry and Almond Butter

  • When ready to serve, slice berries, and add berries to a sweet potato. Drizzle with almond butter and sprinkle with cinnamon, if desired.
