Broccoli Cauliflower Salad

A healthy broccoli cauliflower salad, loaded with tons of toppings! We love grapes, raisins and sunflower seeds, but make this your own by swapping out your favorite nut, omitting the cheese to make it vegan, or adding bacon!

Ingredients

  • 4 cups broccoli chopped finely
  • 4 cups cauliflower chopped finely
  • 1 bell pepper yellow or orange, diced
  • 1 cup red grapes halved
  • 1/2 cup golden raisins
  • 1/2 cup sunflower seeds toasted and salted
  • 1/2 cup cheddar cheese optional, cut into cubes

Tahini Dressing

  • 1/3 cup tahini
  • 1/3 cup lemon juice
  • 1/4 cup white wine vinegar
  • 2 tablespoons olive oil
  • 1/2 tablespoon honey optional, or sub date syrup
  • salt and pepper to taste

Instructions

  • Add chopped broccoli and cauliflower to a large colander, and rinse with hot water. This softens up the vegetables and cleans them well at the same time. Set aside to allow them to cool.
  • Prepare the dressing by adding all the ingredients into a jar, and shaking vigorously. 
  • Toss the cooled broccoli and cauliflower in the dressing, and then top the salad with all the toppings right before serving.
  • This salad can be prepared ahead of time. Toss the broccoli and cauliflower in the dressing, and refrigerate until ready to serve. Add the toppings right before serving.
