Mediterranean One Pot Pasta

WHAT YOU NEED

Gluten free pasta  Water boiling Vegetable broth Tomatoes Artichoke hearts  Black olives Onion  Thyme  Cumin Sea salt and black pepper  Basil

Bring 3 cups to boil in a large pot. Add pasta

ONE

Add vegetable broth, tomatoes, artichoke hearts.

TWO

Add onions, olives, thyme, and cumin.

THREE

Allow the pasta to come back to a boil over high heat, and stir the pasta and it begins to cook.

FOUR

Once the pasta has cooked, remove from pot and add to plates quickly to keep pasta from overcooking in the broth. Garnish with fresh herbs or parmesan cheese, and serve immediately.
