Spicy Shrimp Tacos with Cabbage Slaw

These rival your favorite taqueria offerings! Tender shrimp is sautéed with spicy cajun seasoning, then layered into tortillas with a tangy cabbage salsa and sweet chunks of fresh pineapple. A summer dream dinner!

Ingredients

Spicy Shrimp

  • 1 pound wild shrimp peeled and deveined, tails removed
  • 2 teaspoons cajun seasoning or blackening seasoning
  • 1 teaspoon sea salt omit if your seasoning has salt
  • lime juice (optional)

Tacos

  • 8 tortillas corn, flour, or almond flour, warmed in skillet
  • cabbage salsa
  • 1 cup pineapple cut into chunks
  • 1/2 cup cotija cheese

Instructions

  • Into a skillet, add avocado oil and shrimp over medium high heat. Season with salt and cajun seasoning. Cook about 2 minutes, then flip, and cook the other side for another 2 minutes.
  • Warm tortillas in a skillet, about 30 seconds per side over medium high heat.
  • Assemble tacos by layering tortillas with cabbage salsa, spicy shrimp, pineapple, and cotija cheese.

Notes

Make them Less Spicy: Use half of the cajun seasoning, or omit all together and season the shrimp with salt, cumin, paprika, and lime juice. If you make your own cabbage salsa, you can also cut down on the amount of jalapeno.
Save Time: No time to make a cabbage salsa? The homemade version is really best after left sitting for a few hours or overnight. Buy a prepackaged slaw mix, and jazz it up with some chopped jalapeno and lime juice.
Mix up the Fillings: No pineapple? Mango or avocado are both great additions to these seafood tacos. A storebought guacamole would also be great!
Make These Dairy Free: These shrimp tacos are great without the cheese! Keep them dairy free by omitting the cheese. If you’d like, add avocado to replace the creaminess!
