Apple Crisp with Pecan Crumble Topping

Juicy baked apples are topped with a crumbly, buttery oatmeal and pecan topping. This healthy version of the classic dessert is perfect paired with vanilla ice cream or thick, creamy Greek yogurt.

Ingredients

Apples

  • 7 apples (3 pounds) tart, like honey crisp or Gravenstein
  • 3 tablespoons maple syrup or coconut sugar, honey, or date syrup
  • 2 tablespons arrowroot
  • 2 tablespoons lemon juice
  • 1 teaspoon cinnamon
  • 1/8 teaspoon sea salt

Crisp Topping

  • 1 cup oats gluten free if necessary
  • 1/2 cups oat flour (grind oats in blender)
  • 1/2 cup pecans roughly chopped
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 6 tablespoons maple syrup
  • 6 tablespoons butter melted

Instructions

  • Preheat oven to 350º F.
  • Core and then thinly slice the apples. Peel the apples if you prefer them that way. Add them to an 8×8 baking dish.
  • Drizzle the apples with lemon juice and maple syrup, then sprinkle with arrowroot, cinnamon, and salt. Toss the apples to evenly coat them.
  • Top the apples with the crisp topping.
  • Cover the apple crisp with foil, and bake for 45 minutes. Remove the foil, and bake for an additional 20 minutes until the apple filling is bubbling and the crisp topping is browned.

Crisp Topping

  • In a medium sized mixing bowl, combine the oats, oat flour (if you don’t have oat flour, use rolled oats blended until a flour forms), pecans, cinnamon, and salt. Mix together to combine.
  • Add maple syrup and melted butter to the topping ingredients, and stir together until coated.

Sugar Free Apple Crisp

This recipe can be made sugar free by swapping out the maple syrup in both the apple filling and the crumble topping with monk fruit sweetener.
I use this Monk Fruit Sweetener and my family can't tell I am making sugar free desserts!

Nut Free Apple Crisp

No pecans? No problem! You can omit the nuts in the recipe and still have a delicious Gluten Free apple dessert! If you'd like, add 1/3 cup of unsweetened, shredded coconut into the oatmeal crumble.

Vegan Apple Crisp

Use a vegan butter in the crumble topping, or try melted coconut oil in its place.
