Baked Italian Sausage Sheet Pan Dinner

The perfect quick dinner idea to get you through busy weeks! Peppers, onions, and potatoes round out this meal, but see the notes below to customize the recipe to the veggies you have on hand. We love Italian chicken sausages, but your family's favorite sausages will work in this recipe too!

Ingredients

  • 2 bell peppers green, yellow, red or orange, thinly sliced
  • 1 pound peewee potatoes cut in half, or red potatoes sliced in thin slices
  • 1 onion yellow or red, thinly sliced
  • 2 tablespoons olive oil or avocado oil
  • 2 teaspoons Italian seasoning
  • 1 1/2 teaspoons Kosher salt
  • black pepper to taste
  • 4 Italian Sausages Sweet or Hot, Chicken or Pork, or favorite sausages

Instructions

  • Preheat oven to 425º F. Line a baking sheet with parchment paper and set aside. *If using the Sharp Convection Oven, set to convection bake.
  • Add the sliced peppers, onions, and potatoes to a baking sheet. If you’re using larger potatoes (I used peewee potatoes), slice them in 3 or 4 slices so they cook faster. Toss the vegetables with olive oil, Italian seasoning, Kosher salt and black pepper.
  • Nestle the Italian sausages between the vegetables on the baking sheet.
  • Bake the Italian sausages and vegetables for 30 minutes. If desired, garnish with chopped Italian parsley.

Notes

*Nutrition facts are for pork Italian sausages. Nutrition facts will vary based on what you use! Chicken and turkey sausages are lower in fat and higher in protein.

VARIATIONS

Low Carb Sausage and Peppers Sheet Pan: Omit the potatoes, and add 2 cups of cauliflower to the vegetable mix. The baking time is the same!
Other Vegetables: Chopped butternut squash, thinly sliced sweet potatoes, cherry tomatoes, and parsnips are great options that will take 30 minutes to bake. If you’d like to include softer vegetables, like broccoli, asparagus, or zucchini, add those for the last 15 minutes of baking time.
Sausages: Any type of sausage you enjoy will work for this recipe! Larger sausages will take the full 30 minutes. Smaller sausages should be added to the sheet pan after the vegetables have cooked for 10 minutes (for the last 20 minutes).
Sweet Italian sausages, turkey sausage, or pork sausages are all great. We love the Organic Chicken Apple sausages at Costco and use those in this recipe also.
