Ingredients

  • 1 cup dragon fruit cubed and frozen
  • 1/2 cup banana frozen in chunks
  • 1/4 cup orange juice fresh squeezed
  • 1/4 cup raspberries defrosted to a puree (or fresh is fine)
  • 1 tablespoon coconut nectar
  • 1/2 teaspoon vanilla extract or 1 vanilla bean, scraped

Instructions

  • Add all ingredients to a high speed blender or food processor bowl, and process until soft serve ice cream consistency.
  • For a thicker ice cream, add to a shallow dish, cover, and freeze for 2-3 hours. If freezing overnight, you will need to reprocess it in the morning to make it soft serve consistency again.
