Sweet Potato and Chicken Sheet Pan Dinner
Herbed chicken, baked with sweet potatoes, broccoli and peppers, for the perfect one pan meal. This easy dinner bakes on a sheet pan for hands-off cooking.

Chicken Marinade
- 1 pound chicken breasts
- 2 tablespoons rosemary fresh, chopped finely
- 2 tablespoons thyme fresh, chopped
- 1 tablespoons lemon juice
- 1 teaspoon sea salt
- black pepper to taste
Sheet Pan Dinner
- 1 onion chopped
- 1 1/2 pounds sweet potato cubed
- 1 tablespoon olive oil
- salt and pepper to taste
- 1 pound broccoli chopped in pieces
- 1 red bell pepper sliced
- 1 lemon thinly sliced
Preheat oven to 450 degrees Fahrenheit.
Chop chicken into large cubes, and add to a bowl.
Add chopped herbs, sea salt, black pepper and lemon juice to the bowl with chicken. Mix well, and set in the fridge to marinate while the preparing the vegetables.
To a sheet pan, add 1 tablespoon olive oil, and spread to coat.
Add chopped onion and large cubes of sweet potato to the pan, season with sea salt and pepper to taste, and put in the oven for 15 minutes.
After 15 minutes, pull the pan out, and add the chicken around the pan. Put back in to bake 10 more minutes.
Pull the pan back out, and add broccoli, red bell pepper, and lemon slices. Add back to the oven for 10 minutes.
Serve right out of the oven while everything is still hot. The onions at the bottom of the pan absorb all the delicious flavors!
