Sweet Potato and Chicken Sheet Pan Dinner

Herbed chicken, baked with sweet potatoes, broccoli and peppers, for the perfect one pan meal. This easy dinner bakes on a sheet pan for hands-off cooking.

Ingredients

Chicken Marinade

  • 1 pound chicken breasts
  • 2 tablespoons rosemary fresh, chopped finely
  • 2 tablespoons thyme fresh, chopped
  • 1 tablespoons lemon juice
  • 1 teaspoon sea salt
  • black pepper to taste

Sheet Pan Dinner

  • 1 onion chopped
  • 1 1/2 pounds sweet potato cubed
  • 1 tablespoon olive oil
  • salt and pepper to taste
  • 1 pound broccoli chopped in pieces
  • 1 red bell pepper sliced
  • 1 lemon thinly sliced

Instructions

  • Preheat oven to 450 degrees Fahrenheit.
  • Chop chicken into large cubes, and add to a bowl.
  • Add chopped herbs, sea salt, black pepper and lemon juice to the bowl with chicken. Mix well, and set in the fridge to marinate while the preparing the vegetables.
  • To a sheet pan, add 1 tablespoon olive oil, and spread to coat.
  • Add chopped onion and large cubes of sweet potato to the pan, season with sea salt and pepper to taste, and put in the oven for 15 minutes.
  • After 15 minutes, pull the pan out, and add the chicken around the pan. Put back in to bake 10 more minutes.
  • Pull the pan back out, and add broccoli, red bell pepper, and lemon slices. Add back to the oven for 10 minutes.
  • Serve right out of the oven while everything is still hot. The onions at the bottom of the pan absorb all the delicious flavors!
