Turkey Sweet Potato Enchilada

These Leftover Turkey Sweet Potato Enchiladas are the cure to your turkey burnout. Turkey dries out quickly, so covering it in spicy sauce and cheese revives it.

WHAT YOU NEED

Add the flesh from the roasted sweet potatoes to a bowl.

ONE

Add lime juice, salt and cumin to the bowl with the sweet potatoes, and mash into a puree.

TWO

Add about half of the enchilada sauce in the bottom of your casserole pan.

THREE

Heat tortillas wrapped in a towel in the microwave for 30 seconds. This softens them so they don’t tear when rolled.

FOUR

Repeat with the other tortillas. Top the rolled enchiladas with more sauce, then top with cheese and olives.

FIVE

Top the enchiladas with extra cheese and olives, if desired

SIX

Cover the casserole dish with foil, and bake the enchiladas for 30 minutes.  Optionally garnish the enchiladas with avocado and cilantro.
