Sweet Potato Soup

This sweet potato soup recipe is livened up with roasted red peppers and some spice.

WHAT YOU NEED:

Cashews Avocado oil Onion Garlic Sweet potatoes Red peppers

Vegetable broth Cauliflower Hot sauce Sea salt Black pepper Cilantro

Soak cashews in water overnight.  Into a large soup pot, add avocado oil, chopped onion, and minced garlic. Saute over medium heat for 5-7 minutes until softened.

ONE

Into the soup pot, add the chopped sweet potatoes, vegetable broth, roasted red peppers, cauliflower into the pot. Bring the mixture to a low boil

TWO

Into the soup pot, add the chopped sweet potatoes, vegetable broth, roasted red peppers, cauliflower into the pot. Bring the mixture to a low boil

THREE

Repeat with all the boiled vegetables, and return the creamy soup to the pot.

FOUR

Season the soup with hot sauce, salt and pepper. Adjust seasonings to taste.
