- 1 avocado large, ripe
- 1/3 cup Greek yogurt full fat recommended
- 1/3 cup olive oil or avocado oil
- 1/4 cup lemon juice
- 1/2 cup Italian parsley roughly chopped
- 2 tablespoons tarragon fresh, roughly chopped
- 2 tablespoons dill fresh, roughly chopped
- 1 teaspoon capers with brine
- 1/4-1/3 cup water to thin to desired consistency
- sea salt to taste
- black pepper to taste
- fresh garlic grated, to taste, optional
Add the avocado, Greek yogurt, olive oil, lemon juice, capers, and herbs to a food processor bowl. Process until smooth.
With the processor running, thin the dressing out with water.
Season the dressing with sea salt, black pepper, and fresh garlic, to taste.
Thanks to the lemon juice, this avocado based salad dressing stores well in the fridge up to 5 days without browning.
Store the dressing in an airtight container or mason jar, and use it throughout the week.
