Gluten Free Waffles

A healthy, protein packed gluten free waffle recipe. This is a great breakfast for kids who don't love other proteins like eggs and bacon. Top these with a delicious homemade blueberry syrup!

Ingredients

  • 2 eggs
  • 1/2 cup yogurt
  • 1/4 cup almond milk
  • 1 tablespoon coconut oil melted
  • 1 tablespoon honey
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup oat flour

Instructions

  • In a large bowl, add eggs, yogurt, almond milk, honey and coconut oil, and beat until well combined.
  • Add cinnamon, baking soda and salt, and mix together well.
  • Last, add oat flour, and stir in until combined.
  • Add waffle batter to a hot waffle iron.

Notes

*To make blueberry syrup, add 1 cup frozen blueberries and 2 tablespoons of water to a saucepan. Heat over medium high heat. When berries start to boil, lower temperature to medium low, and stir in 2-3 tablespoons of honey or maple syrup. Use hot on waffles.
