In a small bowl, combine the SunButter, maple syrup, coconut oil, cinnamon, ginger and sea salt. Mix together well.
Add in the oatmeal, and optional coconut, seeds, or nuts, and mix to combine. Set aside.
Cut washed peaches in half, and remove the pits.
Preheat air fryer to 350º F for 5 minutes.
Place peaches cut-side down in the air fryer basket, and cook for 7 minutes.
Flip peaches over, add 1 tablespoon of oatmeal topping to the centers, and return to cook for another 5 minutes.
Serve peaches hot with ice cream!
