Cut, core, and peel apples. Chop into small chunks and add to a bowl of water with lemon juice to prevent browning.
Drain the apples and add them into a mixing bowl along with maple syrup, lemon juice, coconut oil, arrowroot, and cinnamon. Toss the apples to evenly coat.
Divide the apples between 4 ramekins. Cover tightly with foil.
Preheat the air fryer to 390º F for 5 minutes. Add the ramekins and cook the apples for 25 minutes.
In another bowl, add the SunButter, maple syrup, coconut oil, sea salt and cinnamon. Stir well to combine.
Add the oats and optional coconut (or nuts). Stir to mix into a crumbly topping.
Remove the foil from the ramekins, and divide the crisp topping between the 4 dishes.
Return to the air fryer for 5 minutes, until the topping is golden brown.
