Apple Cider Vinaigrette
- 1/3 cup olive oil
- 3 tablespoons apple cider vinegar
- 2 tablespoons honey
- sea salt to taste
- black pepper to taste
- 1/2 teaspoon dijon mustard optional
Apple Slaw
- 3 cups green cabbage shredded
- 3 cups red cabbage shredded
- 2 carrots peeled and shredded
- 1 apple pink lady, honeycrisp, or gala
- 1/2 cup green onions chopped
- 1/2 cup cilantro chopped
Apple Cider Vinegar Dressing
Apple Slaw
Layer all the chopped vegetables and apples in a large salad bowl. Add the herbs also if planning on serving the salad quickly. Reserve the herbs to toss at time of serving if prepping the salad ahead of time.
Drizzle on the dressing, and then toss to evenly coat the vegetables.
Garnish with more chopped apples and herbs, if desired. Pumpkin seeds, sunflower seeds, and chopped almonds make a great topping too.
How to Store Leftovers
Cabbage salads make great leftovers! Dress the salad, and then pack the leftovers in airtight containers and refrigerate for 3-4 days. The vinaigrette soaks into the vegetables making it more flavorful as the days go by.
If you’re intentionally meal prepping this salad, keep the apples and fresh herbs separate. Add the dressing to the cabbage and carrots. When ready to serve, chop the apple and herbs and top the salad.
