Servings: 6 patties

- 2 cans salmon preferably wild caught
- 1/3 cup almond flour
- 1 egg
- 1/4 cup parsley finely chopped (sub dill or cilantro)
- 2 tablespoons onion minced, yellow or red onion
- 2 tablespoons jalapeno pepper minced, or sub green bell pepper, optional
- 1 tablespoon lemon juice
- 1 teaspoon sea salt (or to taste, depending on saltiness of canned salmon)
- olive oil for frying (sub avocado oil)
Add all ingredients into a food processor bowl. Pulse until the ingredients are well incorporated, but do not process too long or the ingredients will be become more like a paste.
Heat skillet over medium heat. Add a generous drizzle of olive oil to the hot skillet.
Using a 1/3 cup measuring cup or scoop, press the salmon mixture into a patty. Add the patty into the hot oil. Cook the salmon patties for 4-5 minutes, until deeply golden brown. Flip, and continue to cook the other side for another 4-5 minutes. Repeat until all the salmon mixture has been cooked into patties.
Serve hot over fresh greens with whatever sauces you love!
How to Store Leftovers + Reheating Tips
Once the salmon patties have fully cooled, place in an airtight storage container, and refrigerate for 2-3 days.
To Freeze: These freeze wonderfully! Add to an airtight storage container, and freeze up to 3 months. Allow to thaw in the refrigerator for a couple of hour or at room temperature for 30 minutes prior to reheating.
To Reheat Leftovers: Add thawed salmon patties back into a skillet with olive oil or medium heat. Allow to cook for 3-4 minutes, then flip and continue to cook on the other side, until hot throughout.
How to Serve Salmon Patties
Salmon patties are traditionally served with tartar sauce or something similar. To make a quick, high-protein (healthy!) tartar sauce, combine:
Greek Yogurt Tartar Sauce
- 1/2 cup Greek yogurt
- 2 tablespoons avocado oil mayonnaise
- 1/4 cup dill pickle, chopped finely
- 1 teaspoon dill (or 2 tablespoons fresh dill)
- 1 teaspoon honey
- 1 teaspoon lemon juice
- 1/2 teaspoon onion powder or dried minced onion
- salt and black pepper, to taste
Serve over Greens
My favorite quick meal is to make an arugula salad (use whatever greens you have!) with some mashed avocado on top. Add cherry tomatoes, thinly sliced red onion, olives, or sliced bell peppers, if desired. Drizzle with olive oil, balsamic vinegar, and lemon juice.
As a Salmon Burger
Make these bigger (divide into 2-3 portions) and add to a bun or gluten free bun, along with tartar sauce, dijon mustard, lettuce, tomato, and pickle, for a simple salmon burger!
