Marinated Red Onions

Red onions, marinated in a zesty olive oil blend, perfect for topping salads, grilled meats, sandwiches and more! These are best if used within 2 days. The olive oil solidifies if refrigerated, so it's best to leave these on the counter and use them quickly. Don't throw out the marinade! Use it as a salad dressing.

Ingredients

  • 1 red onion very thinly sliced
  • 6 tablespoons white wine vinegar or red wine vinegar
  • 1/2 cup olive oil
  • 2 teaspoons oregano
  • 1 teaspoon sea salt

Instructions

  • Very thinly slice onions with a sharp knife or a mandoline slicer.
  • Add onions to a bowl, along with vinegar, olive oil, sea salt, and oregano. Mix together and submerge onions. Allow onions to sit at room temperature for a couple hours before using, and then on the counter for up to 3 days.
