A Full Meal on 1 Sheet Pan!
I love a convenient, no fuss dinner, and this is one of the best! This delicious recipe takes about 10 minutes of prep and then is hands off while it bakes.
It’s something I make when I don’t want to make dinner. No pre-planning, no marinating, and minimal clean up.
Plus, the whole family loves this fantastic sheet pan dinner.
I am so serious about this being a 1-pan meal, that I toss the vegetables in oil directly on the sheet pan. No additional dishes to clean up!
This is perfect for a family meal, but also a great meal prep recipe. Bake this sheet pan meal up on a Sunday and pack it in individual containers to reheat for lunches all week.
I love the Whole Foods Italian Chicken Sausages, so I use those. They have minimal ingredients and the perfect spicy flavor. Use whatever sausages your family really enjoys!
To round out a full meal, I throw colorful bell peppers, onions, and baby potatoes on the pan. The sweet peppers and onions are the perfect contrast to spicy sausage.
To ensure everything cooks in the same amount of time, I use baby potatoes and slice them in half!
Toss the veggies in olive oil, Italian seasoning, salt and pepper – simplicity at it’s best!
This recipe is Whole30 approved if you buy clean, sugar free sausages! Check the label for no added sugar or preservatives, or buy organic sausages from your butcher.
This bakes in 30 minutes in my Sharp European Convection Oven. It preheats quickly so by the time my veggies and chopped, I can pop it in and set the timer for 30 minutes.
I love the ease of using this oven! The convection bake mode allows air to circulate, that helps veggies and meat brown well.

What You’ll Need
- Hot Italian Sausage (use sweet Italian sausage if you prefer, or your family’s favorite kind of sausage. I used raw sausages, but precooked sausage works also).
- Baby Potatoes (I used peewee potatoes. If you use a larger potato, cut them in slices so they cook faster).
- Sweet Bell Peppers (a combination of colors!)
- Yellow Onions (or red onion)
- Olive Oil (or avocado oil or ghee)
- Garlic, minced (save time by using garlic powder)
- Italian Seasoning
- Kosher Salt
- Black Pepper
- Red Pepper Flakes (optional, to add a kick)
- Fresh Herbs, like Basil or Italian Parsley (optional, to garnish)
How to make a Baked Italian Sausage Sheet Pan Dinner
Just a few simple steps to put together this dinner! The only thing that needs to be planned ahead is to have sausage links defrosted.
Step 1: Preheat oven to 425º F. Line a baking sheet with parchment paper and set aside. This will also cook in a large 9×13″ baking dish.
Step 2: Add the sliced peppers, onions, and potatoes to a baking sheet. If you’re using larger potatoes (I used peewee potatoes), slice them in 3 or 4 slices so they cook faster. Toss the vegetables with olive oil, Italian seasoning, Kosher salt and black pepper.
Step 3: Nestle the Italian sausages between the vegetables on the baking sheet.
Step 4: Bake the Italian sausages and vegetables for 30 minutes. If desired, garnish with chopped Italian parsley.
How to Store Leftovers, or Meal Prep Sausage, Peppers and Onions!
Once the sausage and vegetables have fully cooled, pack the leftovers in an airtight container and refrigerate for up to 4 days.
This Italian sausage recipe is perfect for meal prep. Divide the vegetables into 4 containers, and add a sausage into each one. You can also easily customize the amount of potatoes or sausages to meet your macro requirements for each meal!
The sausage and peppers can be reheated in a skillet over medium heat for about 10 minutes, or in the microwave for 2 minutes.
Variations
Low Carb Sausage and Peppers Sheet Pan: Omit the potatoes, and add 2 cups of cauliflower to the vegetable mix. The baking time is the same!
Other Vegetables: Customize this versatile recipe with your favorite veggies. Chopped butternut squash, thinly sliced sweet potatoes, cherry tomatoes, and parsnips are great options that will take 30 minutes to bake. If you’d like to include softer vegetables, like broccoli, asparagus, or zucchini, add those for the last 15 minutes of baking time.
Sausages: Any type of sausage you enjoy will work for this recipe! Larger sausages will take the full 30 minutes. Smaller sausages should be added to the sheet pan after the vegetables have cooked for 10 minutes (for the last 20 minutes). Go with your personal preference to make this the best meal!
Sweet Italian sausages, turkey sausage, or pork sausages are all great. We love the Organic Chicken Apple sausages at Costco and use those in this recipe also.
