An Easy, Delicious Cheesy Broccoli Casserole
In the winter, salads become less appealing and I look forward to coming in to a hot meal. Most casseroles are full of heavy ingredients, like pastas, potatoes, and rice.
This Keto Broccoli Casserole is lower in carbs, and full of nutrients and fiber, by swapping rice for cauliflower rice.

How to Make a Keto Broccoli Casserole
Step 1: In a medium sized mixing bowl, whisk together the eggs, heavy whipping cream, parmesan cheese, salt and pepper.
Step 2: Into a 9×9 inch casserole pan, add the cauliflower rice, ham, and broccoli.
Step 3: Add the egg mixture to the casserole dish, and use a fork to mix it together with the veggies and ham.
Step 4: Top the casserole with cheddar cheese.
Step 5: Cover the casserole with foil, and bake for 35 minutes.
Step 6: Uncover, and bake the casserole for another 10 minutes, or until cheese is bubbling and starting to brown.
Tip: If the cauliflower rice lets out a lot of water, drain the excess water after removing the foil, before cooking the casserole for the last 10 minutes uncovered.
Meal Prep This + Variations
I love having this casserole ready to go for lunches!
Store leftover portions in meal prep containers. When ready to enjoy, pop it in the oven for 10 minutes or even heat it in a skillet with a lid, until it’s hot throughout and the cheese is melted. It’s great with a salad on the side, or just as-is!
Make this with other proteins: Shredded chicken, precooked sausage, or canned tuna would all be great protein choices for this casserole.

Keto Broccoli and Ham Casserole
Ingredients
- 3 eggs whisked
- 1/3 cup heavy whipping cream *look for pastured or grass-fed
- 1/2 cup parmesan cheese grated
- 1 teaspoon sea salt
- black pepper to taste
- 6 cups cauliflower rice
- 2 packages Jones Dairy Farm Hickory Smoked Canadian Bacon
- 4 cups broccoli florets
- 2 cups cheddar cheese
Instructions
- Preheat oven to 425º F.
- In a medium sized mixing bowl, whisk together the eggs, heavy whipping cream, parmesan cheese, salt and pepper.
- Into a 9×9 inch casserole pan, add the cauliflower rice, ham, broccoli, and the egg mixture. Use a fork to mix together the the ingredients.
- Top the casserole with the shredded cheddar cheese.
- Cover the casserole with foil, and bake for 35 minutes. Uncover the casserole, and bake for another 10 minutes to brown the cheese on top.
