Say YES to Ice Cream for Breakfast!
My 6 year old kills me. He is among the pickiest eaters of all the kids I know. With our house being full of healthy, whole foods, I imagined him growing up having a natural craving for all things nutritious.
Unfortunately, that’s far from reality. The past few months, he’s been waking up in the morning and when I offer milk or water, he asks for ice cream. It doesn’t matter how many times I’ve let him know that’s not an appropriate choice first thing in the morning, he still has hope.
I decided to get creative and give him what he wants – and what he needs at the same time.
Getting him to enjoy these hinged on freezing the mixture and using the ice cream scoop to form a “real deal” ice cream sundae look.
He’s getting bananas, berries, and full fat Greek yogurt, a breakfast I’d love to offer him in the mornings, but his mind is registering “treat!”
What You’ll Need to Make Healthy Ice Cream
Healthy Ice Cream
- Frozen Bananas
- Berries (fresh or frozen — blueberries, raspberries, strawberries and cherries all work great!)
- Greek Yogurt (you can sub a vegan yogurt of choice here)
Topping Suggestions
- SunButter!
- Berries
- Nuts or seeds
- Unsweetened Coconut
- Dark Chocolate or Chocolate Chips
- Toasted Coconut Granola
The toppings are the best part! The best topping is our favorite nut/seed butter, SunButter sunflower seed butter. It’s perfect for allergy sufferers (like me!), a school-safe option (we love these little single serve packs!).

How to Make Breakfast Ice Cream Sundaes
Step 1: Add frozen bananas (I freeze them in quarters), raspberries (or other berry of choice), and Greek yogurt to a high speed blender. If you make these in a standard blender, add 1/4 cup coconut or almond milk.
Step 2: Use the tamper stick to push the fruit down into the blade until it comes together into a super creamy, thick mixture.
Go ahead and eat it like this if you’d like – Thick Smoothie Bowl style!
Step 3: Add the thick mixture into a loaf pan or similar sized container, and pop it in the freezer for 1-2 hours. (My outdoor freezer is set lower and it will freeze this perfectly in an hour. The one in my house is a more “normal” temperature and it takes over 2 hours to set).
Step 4: Scoop the mixture with an ice cream scoop to give it an authentic “ice cream sundae” flair!
Add delicious toppings – kids love choosing their own!
How to Make Ahead and Store Leftovers
Make ahead: If you’re planning this for breakfast but won’t have time to freeze it in the morning, make it the night ahead, and then pull out of the freezer 30 minutes-1 hour prior to scooping.
Storing Leftovers: Freeze in an air tight container. When ready to enjoy, pull out of the freezer 30 minutes to 1 hour ahead of time. If it’s not softening fast enough, you can use a knife to chop it in chunks and toss it in a food processor to make it creamy again.
Tips for the Healthy Breakfast Sundaes
- Mix up the Fruit: Raspberries, blueberries and strawberries, and all are delicious! Later in the summer I will also try peaches and blackberries!
- Make it Vegan or Dairy Free: Sub coconut milk for the yogurt, or try using a vegan almond milk or coconut yogurt.I suggest adding a vegan protein powder if you choose this option, to keep the breakfast from being straight carbs.
- Make it Paleo: Use coconut milk in place of the yogurt, and add 20g-40g of collagen protein powder.

Healthy Breakfast Sundaes
Ingredients
- 4 large bananas quartered, and frozen overnight
- 1 cup fresh berries raspberries, strawberries or blueberries
- 1/2 cup greek yogurt full fat is the best!
Topping
- granola
- berries and banana
- dark chocolate chips
- nut butter I used unsweetened sunflower butter – my fav!
Instructions
- Freeze bananas until very frozen (overnight is best). Make sure to cut them in quarters so they will blend or process easily.
- Add yogurt, fresh (or thawed from frozen) berries and frozen bananas to a high speed blender or into a food processor bowl. Process until all combined and the consistency is soft and fluffy like soft serve.
- If you want scoopable ice cream, add to a freezer container, and freeze for 1-3 hours. I put it in our deep freeze for a little over an hour and it was a great consistency. Otherwise, just eat it like soft serve!
- Top with granola, nut butter, and fresh fruit!
