A Delicious Low Carb Zucchini Pizza Recipe
We love creative spins on pizza! The combination of zesty pizza sauce, melty mozzarella cheese, and a variety of pizza toppings is crave-worthy. Losing the crust and building your “pie” on alternative ingredients keeps these lower in carbs and calories, higher in nutrients, and most of all, really fun!

I love making pizzas with kids. Once the base is ready, they can add their favorite toppings to make it their own. Be sure to have your family’s favorite toppings and they’ll be just as excited about it as you are to see them eating their veggies.

Other delicious toppings are red onion, olives, green bell pepper, pineapple and fresh basil! We love these with mozzarella and ricotta cheese, but sprinkling them with parmesan cheese would also be delicious.
How to Make Healthy Zucchini Pizza Boats
Step 1: Cut the ends off the zucchini, and then cut them in half lengthwise. Use a spoon to scoop the seeds out of the center of each zucchini half. A melon baller also works great to scoop out the insides. Brush the zucchini halves with avocado oil and lightly season them with salt and pepper, if desired.
Step 2: Grill the zucchini halves over high heat for 3-5 minutes to begin softening them.
Step 3: Add pizza sauce, shredded mozzarella cheese, and chosen pizza toppings to the center of each zucchini half. If desired, top them with scoops of ricotta cheese.
Step 4: Put the zucchini pizza boats back on the grill for 5-10 minutes, until the cheese has melted and the toppings are hot.
Make Zucchini Pizza Boats in an Oven
If you’d rather keep your pizza-making indoors, you can cook your zucchini pizza boats in an oven or even in an air fryer!
Step 1: Preheat your oven to 425º F. Or, preheat your air fryer to 390º F.
Step 2: Prepare your zucchini the same as directed above, but don’t pre cook the zucchini. After they are sliced lengthwise, brush them with avocado oil, and season them with salt and pepper.
Step 3: Fill the zucchini with pizza sauce, shredded mozzarella cheese, and chosen toppings. Place stuffed zucchinis on a baking tray if baking in the oven.
Step 4: Bake the zucchini pizza boats for 12 minutes, or until cheese is hot and bubbling. If making these in the air fryer, place 2 pizza stuffed zucchini halves in the air fryer at a time (some fryers might handle more!), and air fry for 8 minutes, until the cheese begins to brown.

How to Store Leftover Zucchini Pizza Boats
If you make extras, no problem! These make wonderful leftovers.
After they have completely cooled, store leftover pizza zucchinis in an air tight container, and refrigerate for up to 4 days. Reheat these in the oven for 10 minutes at 425º F, or use an air fryer to reheat them at 390º F for 8 minutes. A small toaster oven would also be good.

Ingredients
- 3 zucchinis
- avocado oil to brush
- sea salt to taste
- black pepper to taste
- 1/2 cup pizza sauce check for no sugar added
- 1 cup mozzarella cheese
- 1 package Jones Dairy Farm No Antibiotics Ever Turkey Sausage
- pizza toppings peppers, olives, pineapple, mushrooms, etc.
- 6 tablespoons ricotta cheese optional, or use parmesan cheese
Instructions

- Preheat a grill to high heat. If using an oven, preheat it to bake at 425º F. If using an air fryer, wait to top the zucchinis with pizza toppings before preheating it.
- Grill the zucchini halves over high heat for 3-5 minutes to begin softening them. (skip this step if using an oven or an air fryer).
- Add pizza sauce, shredded mozzarella cheese, and chosen pizza toppings to the center of each zucchini half. If desired, top them with scoops of ricotta cheese.
- Put the zucchini pizza boats back on the grill for 5-10 minutes, until the cheese has melted and the toppings are hot. If baking these in an oven, add them to a baking tray and bake for 12-14 minutes. If using an air fryer, preheat it to 390º F for 5 minutes, and then add the zucchini pizza boats 2-3 at a time, and allow them to air fry for 8 minutes.
- Garnish pizza boats with fresh basil, parmesan cheese, or Italian parsley, if desired.
- After they have completely cooled, store leftover pizza zucchinis in an air tight container, and refrigerate for up to 4 days. Reheat these in the oven for 10 minutes at 425º F, or use an air fryer to reheat them at 390º F for 8 minutes. A small toaster oven would also be good.
