My friend recently had a 2nd baby boy. I remember those days and weeks (and months!) after my son was born. It was such a precious time, but it was also a stretch of time that I ate very little that wasn’t directly from a package.
Taking the time to actually cook was out of the question!
The best thing to take to a friend with a new baby is healthy food! I’ve taken dinners, Lactation Cookies, and packs of granola bars for the freezer.
Newborns keep you very, very busy, and very, very sleep deprived. I definitely ate my share of chocolate and fruit during those first few months– the sugar cravings were intense!
I decided to make a coffee cake because A). YUM! and B). It’s actually a great healthy option when you make it with fruit, whole grains, and a natural sweetener. I knew it would be the perfect way to make sure she got at least a few delicious breakfasts.
I made a gift basket, including this breakfast-worthy apple cake, and a small toy I had picked up for the baby. While I was shopping, I picked up some fresh fruit, orange juice, and a gerbera daisy plant to brighten up the package.
It is my go-to gift to cook or bake things for the people I love when they need a little extra care. It’s a gift of not only something delicious to eat, but it also gives the recipient the gift of time (a break from cooking and cleaning during an already intense time)!
Bob’s Red Mill believes baking for someone else is one of the surest signs to show how much you care. I use Bob’s Red Mill almost exclusively when I bake. The range of gluten free flours is amazing.
If you haven’t used them before, you need to try them- and you can print a coupon for $1 off a package!

Giveaway
To celebrate fall, baking, and taking care of those you love, Bob’s Red Mill is hosting a giveaway. Enter here to win: Bob’s Red Mill products (care package includes: organic all purpose flour (3 lb), almond flour, gluten free 1-1 flour (3 lb), baking powder, baking soda, active dry yeast, cane sugar, brown sugar, and a bob’s red mill flour sack towel).
This cake uses the blanched almond flour and my other favorite- oat flour. Using these in place of wheat flour makes the cake gluten free, but also raises the protein and fiber content, making a more nutritious baked good.
Tips for Caramel Apple Coffee Cake
- Make it Gluten Free: Almond flour is naturally gluten free. Be sure to pick up Certified Gluten Free Oat Flour if necessary.

- In the prepared cake pan, first layer the cake batter, then top with the sliced apples, pressing down slightly into the cake.
- Top the cake and apples with the crumb topping.
- Bake for 35-40 minutes, pressing down past the apples with a skewer or fork to check doneness in the center of the cake.
- Top with caramel sauce when ready to serve.

I love using date syrup as a more natural sweetener in my baked goods. It was perfect for this recipe because it has a naturally caramelly flavor.
I have switched to using date syrup in place of honey is most of my recipes. It works as a 1-1 replacement, and is just a bit less sweet (which I prefer). I don’t like sugar or honey in my drinks, but I will use about 1/2 teaspoon of date syrup in home made almond milk lattes and love the natural sweetness it provides.
You can sometimes find it at health food stores like Whole Foods, but it is also available on Amazon.

Oh my goodness, what a wonderful way to get those whole grains in. I never know what to make for someone who’s gluten free. Thanks so much!
Michelle says
Yes, I like to think of of my gluten free cakes as kind of like a bowl of oatmeal 🙂 Rigth?! That’s what I tell myself when I let my toddler eat oatmeal cookies for breakfast.

This reminds me of a cake my grandma used to make! I love that it’s gluten free, too, because so many people at my church have that restriction.
Michelle says
I love serving gluten free baked goods even when people don’t have the restriction– just because using flours like Bob’s Red Mill almond and oat are so much more nutritious than white flour!
Taylor says
That salted caramel sauce looks absolutely divine Michelle! I love Bob’s almond flour but would love to try their oat flour – I actually use oat flour regularly when making protein bars to add a little bit of extra fibre and protein. This cake though…I NEED to try it!!!
Michelle says
Thanks Taylor! <3 I often make my own oat flour by just grinding Bob's gluten free oats in my blender-- but I find buying it already ground gives cakes a much more "normal" cake texture. For cookies and protein bars, the extra texture is welcome!
Mahy says

Natalie says
What a delicious cake! Looks absolutely gorgeous and perfect for the weekend!
Lisa says
I made this several months ago (maple syrup in place of date, and left out the caramel sauce in hopes of being a little more healthy) and I absolutely loved it! I would like to make this for my bf tomorrow, but I am out of both almond flour and oats (I only have steel cut right now). Could I make this with a different type of flour? I have all purpose gluten free flour, tapioca, coconut and banana flour on hand. If any of these would work, how much would you use? Thank you!
Michelle says
I imagine the gluten free flour will work. In my experience, it needs more sweetener than using almond and oat, which are naturally sweet. I suggest just adding an extra tablespoon or two of maple syrup! Thanks for letting me know you love this! We do too. I have a new apple recipe coming very soon!
Sanya says
