A Crunchy Apple and Cabbage Salad
We adore cabbage salads! I often make them to keep in the fridge for the week. Cabbage stays fresh and crunchy and I love mixed with a variety of proteins.
This Apple Slaw was made with my Oven Baked Pulled Pork in mind. Apples and pork are a match made in heaven. This tangy, crunchy, and slightly sweet slaw is a dream piled on top of BBQ Pulled Pork.
It’s simple to put together. I use my food processor to shred cabbage and carrots, slice up an apple, chop up some herbs, and then shake together an apple cider vinaigrette dressing. Keep it simple, or get fancy by adding some walnuts, almonds, or even goats cheese or feta cheese.

What You’ll Need
- Green Cabbage
- Red Cabbage (purple cabbage)
- Carrots
- Sweet-Tart Apples: red apples, like honeycrisp, gala, or pink lady (even granny smith apples)
- Herbs: cilantro and green onions (or use Italian parsley instead of cilantro if you have an aversion!)

Apple Cider Vinaigrette Dressing
- Olive Oil (EVOO)
- Apple Cider Vinegar
- Honey (or sub maple syrup. I recommend raw honey. Read more about why I love honey as a sweetener in this Honey BBQ Sauce recipe. )
- Sea Salt and Black Pepper
- Optional: Dijon Mustard (keep this simple or add a bit more flavor!)

How to Make Apple Slaw
Step 1: Combine the dressing ingredients in a jar, and shake well to combine.
Step 2: Layer all the shredded cabbage, carrots, and apples in a large bowl. Add the herbs also if planning on serving the salad quickly. Reserve the herbs to toss at time of serving if prepping the salad ahead of time.
Tip: A slicing blade on a food processor makes quick work of this salad! If you don’t have one, use a sharp knife to thinly slice the vegetables.


Step 3: Drizzle on the dressing, and then toss to evenly coat the vegetables.
Step 4: Garnish with more chopped apples and herbs, if desired. Pumpkin seeds, sunflower seeds, and chopped almonds make a great topping too.


How to Store Leftovers
Cabbage salads make great leftovers! Dress the salad, and then pack the leftovers in airtight containers and refrigerate for 3-4 days. The vinaigrette soaks into the vegetables making it more flavorful as the days go by.
If you’re intentionally meal prepping this salad, keep the apples and fresh herbs separate. Add the dressing to the cabbage and carrots. When ready to serve, chop the apple and herbs and top the salad.
